Celebrate Easter with something that isn’t chocolate, and which is bunny and dentist approved. These carrot fries are quick and easy to make and are a fun way to eat more veggies. The Greek yoghurt dip adds plenty of calcium.
1tbsp chopped fresh parsley
2tbsp olive oil
Chive and Greek Yoghurt Dip
285g plain Greek yoghurt
2tbsp chopped chives
1tbsp lemon juice
- Preheat oven to 220°C and cut carrots into fries. Mix the carrots with parsley, salt and pepper, paprika and olive oil in a large bowl.
- Line a baking sheet with parchment paper and arrange the carrots in a single layer. Oven bake for 20 to 25 minutes, turning halfway through.
- While the fries are cooking, mix all the dip ingredients together in a small bowl and refrigerate until you are ready to serve.
