4 - Healthy Carrot Fries

Celebrate Easter with something that isn’t chocolate, and which is bunny and dentist approved. These carrot fries are quick and easy to make and are a fun way to eat more veggies. The Greek yoghurt dip adds plenty of calcium.

Ingredients

2 carrots
1tbsp chopped fresh parsley
1tsp salt
1tsp pepper
1tsp paprika
2tbsp olive oil

Chive and Greek Yoghurt Dip

285g plain Greek yoghurt
2tbsp chopped chives
1tbsp lemon juice
1/4tsp salt
1/4tsp pepper

Instructions

  1. Preheat oven to 220°C and cut carrots into fries. Mix the carrots with parsley, salt and pepper, paprika and olive oil in a large bowl.
  2. Line a baking sheet with parchment paper and arrange the carrots in a single layer. Oven bake for 20 to 25 minutes, turning halfway through.
  3. While the fries are cooking, mix all the dip ingredients together in a small bowl and refrigerate until you are ready to serve.
