If you are into comfort food, this recipe is for you. It is warming, hearty and easy to make.
450g potato gnocchi
2tbsp extra virgin olive oil
2 cloves minced garlic
1 x 794ml can San Marzano tomatoes
2 diced carrots
450g spicy Italian sausage or lean ground beef
1 cup milk
1 bay leaf
1 cup red wine
1 small diced sweet onion
2 sprigs fresh oregano
225g torn mozzarella cheese
1 cup shredded provolone cheese
Fresh basil for garnish
Salt and pepper
- Preheat oven to 220°C. Over medium heat, heat the olive oil in a large skillet and add the carrots and onions, seasoning with salt and pepper. Cook for approximately five minutes until softened then add the beef and garlic, cooking until beef is browned for approximately 10 minutes.
- Stir in the milk, wine and tomatoes, and the bay leaf and oregano. Simmer the sauce for 15 minutes until thickened slightly.
- Add 1/3 cup of water and stir in the gnocchi. Bring the sauce to a boil and cook for a further 5 to 10 minutes. Remove from heat, removing the oregano and bay leaf. Top with cheese and bake for 15 minutes until cheese is melted and bubbling. Serve topped with fresh basil.
